Tacos al Pastor – Mexikanische Tacos mit mariniertem Schweinefleisch

Zutaten:

  • 500 g Schweinefleisch (Schulter oder Nacken)
  • 1 Ananas, in Scheiben geschnitten
  • 2 Esslöffel achiote-Paste
  • 1 Teelöffel Kreuzkümmel
  • 1 Teelöffel Paprikapulver
  • 2 Esslöffel Apfelessig
  • 2 Knoblauchzehen, gehackt
  • 1-2 Chipotle-Chilis (getrocknet oder in Adobo)
  • 12 Maistortillas
  • 1 Zwiebel, fein gewürfelt
  • Frischer Koriander, gehackt
  • Limetten, in Spalten geschnitten

Zubereitung:

  1. Das Schweinefleisch in dünne Scheiben schneiden.
  2. In einer Schüssel achiote-Paste, Kreuzkümmel, Paprikapulver, Apfelessig, Knoblauch und Chipotle-Chilis vermischen. Das Fleisch in dieser Marinade mindestens 2 Stunden, besser über Nacht, marinieren.
  3. Eine Grillpfanne oder einen Grill vorheizen und die Ananas sowie das marinierte Schweinefleisch anbraten. Das Fleisch sollte leicht karamellisieren und goldbraun werden.
  4. Die Maistortillas in einer heißen Pfanne erwärmen.
  5. Das Fleisch und die Ananas auf den warmen Tortillas anrichten und mit Zwiebel, Koriander und einem Spritzer Limettensaft garnieren.

Tipp: Tacos al Pastor werden traditionell mit einer Schicht gegrillter Ananas serviert, die die Würze des Fleisches hervorragend ergänzt.
